Basic rules for making pickles

There are basically two different types of pickles that you can make at home. The first category is the refrigerator pickles. These are the pickles that you can keep in your fridge and eat them in a matter of a few days. The process for these pickles is very fast and it will save you some time, but you will only have around 1 week to eat them before they are no longer good. At the same time there is also another process which is called the brine curing method that is going to take a little bit more time to prepare, you will also need to keep them stored for at least one week before you are able to start eating them. But the great thing about it is that you are able to keep them for months with this method.

It doesn’t matter what type of pickles you have decided to make, or what method you planning to use, there are a few common rules that you should be able to take into consideration.

Always make sure that you use fresh fruits or vegetable. In case you can’t pickle them right away after you’ve bought them, make sure that you keep them in the refrigerator, without washing them. This way you can be sure that you will always keep them as fresh as possible.

When you are picking up your fruits or veggies from the supermarket or market, you must make sure that you only pick out those fruits that have no bruises or blemishes. Only the perfect fruits and vegetables are able to turn into delicious pickles.

Wash the fruits carefully, since anything left on them is going to affect the quality of the pickles. In case you are planning to make dill pickles, make sure that you also remove the blossom at the end, since if you leave it on, it will have a negative impact on the quality of the pickles.

The vinegar that you are using for your pickles must have at least 5% acidity. The best vinegar that you can use for pickles is the one which is made out of wine. The white wine vinegar is able to offer you some clear pickles, but if you use apple cider vinegar for example you will be able to transfer some interesting flavors to the pickles.

Use pickling salt. This type of salt is able to help you make perfect pickles. If you will use table salt, the quality of the end product (the pickles) is not going to be the same.

In case you are planning to use tap water and you live in the city, you should make sure that you boil it first before you will be using it for pickles.

How to Pickle Herring

Ingredients

  • 12 herring fillets
  • 4 cups of vinegar
  • 8 bay leaves
  • 6 tablespoons of salt
  • 2 tsp mustard seeds
  • 2 tsp coriander seeds
  • 2 tsp fennel seeds
  • 1 ½ cups of sugar
  • 16 juniper berries
  • 16 black peppercorns
  • 2 onions (preferably large)
  • 4 carrots

Instructions

  1. Put the herring fillets on plates and add the salt over on the part without the skin. You need to keep them with the salt on for at least 2 hours in order to make sure that they will catch the salt and get the perfect taste.
  2. Take a large saucepan and add the vinegar, sugar, peppercorns, onion (sliced), carrots (sliced), bay leaves and the seeds (fennel, mustard and coriander). Keep it on medium heat for around 5 minutes and let it cool down to the room temperature after that.
  3. Take the herrings wash the salt away and cut them in half. Put 3 pieces in a jar, add some onions and carrots and add some more fish, while repeating the same layers until all the jars are full.
  4. The next thing you have to do is to pour down the spiced vinegar into the jars until they are filled.
  5. You need to keep them in a dry and cool place for at least 1 week before the pickles are ready. Once the jar is opened make sure to consume everything within 1 week. You can keep the unopened jars for up to 6 weeks.

  4. Split in equal portions the bay leaves and the cinnamon sticks and put them in the jars.
  5. Tap the jars after they cool down to room temperature.
  6. The grapes pickles will be ready to eat right after one week.

How to Pickle Walnuts

Ingredients

  • 4 pounds of fresh walnuts
  • 7.5 ounces of salt
  • 16 ounces of sugar (preferably brown sugar)
  • 1 ts of allspice
  • ½ ts of cinnamon
  • 4 cups of vinegar
  • 1 tbs of ginger root
  • 1 ts of cloves

Instructions

  1. In order to get the full flavor from the spices you need to pierce each and every walnut with a fork a couple of times, without ruining their integrity. After that place them into a pot or bowl and make sure they are covered in water.
  2. Split the salt quantity in two and add half of the salt in the pot and stir a little bit so that the salt will get dissolved in the water. Keep them like that for 1 week. After that drain everything and add some new and fresh water plus the remaining half of the salt. Keep them like that for another week.
  3. After the second week has passed, you need to drain them and put them on a tray in a dry and ventilated place. From this moment on it’s going to take from 3 to 5 days until they will become black. The black color is the sign that they are ready to get pickled.
  4. For the next step you will need a large pot where you have to add the vinegar, sugar, ginger, cinnamon, cloves and the allspice. Place it on medium heat and when the liquid starts to boil add the walnuts. Keep them on the medium heat for another 15 minutes and mix everything from time to time to make sure they will be properly fried.
  5. When everything cools down to the room temperature, take the walnuts from the pot with a spoon and place them in the jars. Add the syrup over the walnuts in the jars and make sure it covers them completely. Seal the jars and your walnut pickles are ready. You can now keep them in the refrigerator. But in case you plan to keep them for a longer period of time you need to process them in a hot water bath for 10 – 15 minutes.

  3. Add the hot brine over the jalapenos in the jars, tap the jars and you must also process them in a hot water bath for 10 minutes. You need to store the jalapenos pickle jars for at least a couple of weeks before you can start eating them in order to get the full flavor. After that you will have up to 12 months’ time to eat them.

  5. In order to preserve them a longer time you must do a hot water bath canning. Process for only 10 minutes and after that these beets pickles will last for up to 8 months.
